1) Prep your meals on Sunday for the coming week. Cut, slice and chop all of your fresh, raw vegetables and store them in air-tight containers for easy accessibility during the week. Also slice all of your lean proteins such as chicken, fish and turkey fajita-style. This will help you save money and eat proportionately. Freeze your sliced meats and use them when needed.

2) Every morning, slice up fresh fruits like apples, grapefruit and oranges, and store these in air-tight containers and take them with you. Or just take the fruit with you whole, for on the go! Keeping these healthy snacks nearby will help you from bingeing on junk when you’re on the run.

3) Always carry water with you! If you don’t one already, purchase a bottle that you like, and take it with you everywhere. Don’t wait until you’re thirsty to drink water!

Remember that eating raw fruits and veggies is best, you get the most nutrients. Recipe of the Day! Tasty Sweet Potato Parfait!

ImageHealthy Snack

Here’s something healthy for that sweet tooth — the perfect balance of carbs, antioxidants, fiber and pure yumminess! Sweet potatoes are packed with with calcium, potassium, and vitamins A and C. If you don’t eat dairy, try swapping in applesauce — and mixing in the cinnamon, which may lower blood sugar in people with type 1 or type 2 diabetes. Try this delicious, healthy treat today!

Ingredients:

—1 cup Greek yogurt
—Two baked or steamed sweet potatoes
—1 pinch cinnamon
—1/4 cup granola

Directions:

Bake or steam the potatoes for about 45 minutes (if baking, set at 350). Check to make sure they’re cooked by inserting a fork or toothpick to make sure the center is soft. Let the potatoes cool for about 10-15 minutes. Once they are cool, start peeling off the skins. Chop into medium-size squares, and mash until they’re soft and smooth. Start to layer the ingredients in either a cup or bowl. With a large spoon, scoop three heaping spoonfuls of sweet potatoes into the bowl or cup. Then add the second layer of yogurt/applesauce on top, then another layer of potato, then another layer of yogurt. Sprinkle granola on top, and add some cinnamon!

—Put 2 cups mesclun greens in a bowl
—Add 1/2 cup artichoke hearts and 15 roasted pistachios, and any other yummy veggies that you like
—Drizzle with 1 1/2 tablespoons raspberry vinaigrette (or olive oil for an extra healthy-fat boost!)
